I would like to exclude a directory (admin) because I have problems related to the cache (memcached etc ...)

What should I change in nginx conf?

I want that no cache is applied to the selected directory

what caching you using as how you exclude i depends on what caching you are using ?

Unfortunately, you're on your own with custom cache setups as to how you fine tune and exclude directories. From you what you said smarty as in PHP would be PHP level cache and nothing to do with Nginx. It would be related to smarty PHP app level configuration which you'd be on your own.
