This will be an odd question, but I trust the technical talent here, and y'all ought to understand what I'm talking about.

I'm moving my hosting from an expensive datacenter to something less expensive, and I'm incorporating Cloudflare into the move because it's easy to do so now. We have suffered DDOS attacks in the past and I'd just as soon never deal with that again, so I'm trying not to disclose my real address. If I've set things up right nobody will ever know where my forum actually sits...

Unfortunately, I run my own mail server, and I'm not seeing a cloudflare-like service for mail. I was looking for someone to present their IP address as my mail server and proxy connections to the real server in order to keep details about my real ip address reasonably secure. If I don't do something like this, then cloudflare shielding me doesn't do much good when mail.mydomain points to my real IP address.

Is someone offering this sort of service, or is my best choice to simply outsource mail handling/delivery?

Easiest thing to do and save yourself headaches long term is = DO NOT run your mail server use 3rd party like Googe Gsuite or DO NOT run mail server on same server as your forum/site/web app server. So when mail server is attacked, it's attacking mail server that isn't same IP address as site server. Then you can host mail server on maybe a DDOS protected VPS/dedicated server.

Then for server sent email use Amazon SES SMTP as they hide origin IP of your server and setup SES using Postfix SMTP relay or if your web app supports 3rd party SMTP usage i.e. Xenforo and use Amazon SES SMTP there.

What he said. Been using Zoho for a few years now and SES for SMTP. No issues.
